Garlic Pasta and Beans

We were all exhausted after our trip and ended up taking a long, late nap! When we woke up it was past supper time and I had to cook! So here's what I came up with...

GARLIC PASTA AND BEANS

1/2 c. olive oil
8 big cloves garlic, minced or pressed
2 handfuls parsley flakes
1 package (12-16 oz) whole wheat pasta
Salt
2 cans navy beans, rinsed and drained
Lemon
Pepper

Put a pot of water to boil for the pasta. Heat olive oil over low heat in a saucepan. Mix in garlic and parsley. When the water boils, add the pasta and salt and cook according to package directions. After starting the pasta, add the beans to the oil. Mix and continue cooking over low heat. When the pasta is done, drain and return to the pot. Mix in the bean mixture. Squeeze lemon juice to taste and mix in. Top servings with pepper.

Ethan LOVED it! He ate 3 plates! Jesse and I enjoyed it too :-)
