CONNIE'S ULTIMATE POTATO
1 small red potato, baked and cubed or mashed
5 oz chicken breast, cooked (I did mine w/Essence in olive oil), cut in bite-sized pieces
1 oz sharp cheddar cheese, shredded or cubed
6 oz frozen broccoli, cooked, w/butter and salt
Salt if needed
Mix together potato, chicken, cheese, and broccoli. Microwave if needed to melt cheese. Salt to taste. Dip bites in sour cream.
Perfect proportions of everything... Yum yum!
