We went to a cookout at a friend's today. I ate pretty much from lunch till supper! But I never felt full till after supper. I didn't follow my eating plan but ate nothing horrible though. Back on track tomorrow...

Lunch+Snacks+Supper - hamburger on white bun w/blue cheese dressing, hot dog on white bun w/mayo and mustard, macaroni salad (white pasta), avocado dip w/saltines, crab dip w/saltines, burger on white bun w/blue cheese and mayo, salad (twice)
I figured it up earlier and I've slept a total of about 17 hours the past 3 days. That's the minimum I need in 2 days to be able to function... Hope tomorrow's a CALM, QUIET day!

Meals Today
So first off, a little TMI... I guess my stomach didn't like my malt. Despite taking 2 lactase with it, I had to make a fast dash to the bathroom in the middle of the night :-P
We were all so exhausted last night and had a rough night. The boys and I went to bed at 9 but it was almost 11 when Ethan went to sleep. Midnight when I fell asleep. I only got about 5 1/2 hours sleep :-( So two nights in a row of little sleep...
And the kitchen was still a wreck this afternoon when we got home from church because no one had a chance to clean it. Jesse practically begged me to eat out so we didn't have to deal with the kitchen yet. So we did... We went to the Italian buffet. I ate a slice of seafood pizza but everything else was veggie pizzas. Except for the dessert ones of course!

What Do I Title This?!
Time - 1am Saturday morning. Place - our bed. I was still awake. The boys were laying on either side of me. With no warning, Ethan woke up crying hysterically. I couldn't get him calmed down :-( Jesse took him in the living room and rocked him. It was quite a while before he calmed down... In the meantime, Gabriel started crying because Ethan was so upset. I got him back to sleep but it was a while before I fell asleep. I started today with little sleep...
I wouldn't say I'm tired but... I plugged in the blender, started mindlessly playing with the buttons, then got scared half to death when it started :-P Then I grated part of a fingernail along with the chocolate...
We went to my in-laws today for boiled crawfish. They were YUMMY!!! And huge! There's a crawfish pond across the street from their house so they buy them from there. Talk about fresh! I ate a ton but didn't overstuff myself. I passed on the ice cream for dessert.

Me Time!
I got some time to myself today!!! Jesse watched the boys and I got out of the house. Some of the time was running errands, but not all. I did some clothes shopping since I could try stuff on. I ended up with some denim shorts and 2 shirts. I now own exactly 1 pair of shorts that fit me :-P The shirts are just casual but I have very few shirts that fit me either. Most of the ones I have show my bra when I hold Gabriel. Not cool! I spent a total of 20 dollars plus tax on all 3 items :-)
I also got a new cookbook. It took forever to find what I was looking for - vegetarian/vegan, little or no soy (since we don't eat it), and not a lot of tomatoes. The one I ended up buying has all the recipes marked as vegan, lacto-, ovo- so it'll be easy to find a vegan one at a glance. And I can modify a lot of the others. I haven't looked through a lot of it yet but I'm looking forward to having new recipes to try!

Sick kid :-(
Sunday evening Ethan took a long nap on me. I noticed I could smell sinus drainage in his breath. But he wasn't congested. Monday morning he threw up 3 times - real mucusy. My mom and I both occasionally throw up from sinus drainage so I wasn't concerned. He was fine the rest of Monday and Tuesday. Today he started running a fever :-( It went up and down but peaked at around 101. He's just laid around all day. Spent most of the day on or against me. Right now his temp is about 100.5. I'm really happy we bought the temporal artery (forehead scanning) thermometer when I was pregnant with him! I don't disturb him at all when I take his temp. I'll check it when I wake up during the night to make sure it's not high. I won't give him anything for it though unless it goes over 102.5.

Crockpot Chicken Breasts
I don't remember if I posted this or not...
It started with a recipe for a crockpot turkey breast. And I still do it that way sometimes. But the only way I can buy it is frozen, which means waiting days for it to thaw. Plus I've been finding chicken breasts on sale!
The original recipe called for fresh rosemary, which I had never tried. I discovered I'm not too fond of it... We like this way much better!
Crockpot Chicken Breasts
Place about 5 lbs bone-in chicken breasts in a large crockpot. Sprinkle about 1 tbsp brown sugar over them. Cut a small handful of garlic cloves in half and sprinkle over chicken. Then sprinkle a small handful of black peppercorns on top. Cover and cook until tender.
You don't need to add water because it will release its own juices as it cooks. It ends up cooking in its own broth.
Super easy, super yummy, cheap, and it makes a lot! We love to use the chicken in salads for lunch. I usually cook it for Sunday lunch. I start it Saturday night before bed, and when we get home from church, we're welcomed by a fabulous smell!

Discouraged
I'm getting discouraged about this plateau... The number on the scale hasn't moved in 3 months, except for one day (and I have no clue why that is!). This new way of eating isn't about weight loss, but I expected to lose more by now. I really wonder if it's from all the stress I've been under...

Rough Start But Made the Most Of It!
I woke up this morning with the blues after not sleeping good last night, and both the boys were fussy. So after lunch we picked up my mom and went shopping! I didn't get much and nothing was for me :-P But we had fun :-) We ended up going to my mom's for a bit after. Mom and Ethan had burgers but I stopped at the grocery store and grabbed something that wasn't a cheat. Although I did have some fries...

I Don't Get It...
Sunday night I ate homemade whole grain pancakes that had chocolate in them. And my gallbladder acted up. Not bad, but it let me know it wasn't happy :-P
Last night I ate a mildly greasy burger, with sauteed mushrooms, cheese and mayo. And fries. And cheesecake. How much fat did I eat?! I don't want to even think about it. But my gallbladder did fine!
Last night's meal should have given me problems if Sunday night's did... More so because my gallbladder had acted up just two nights before. I'm not complaining, I just wish I knew why!

Later - 2 pecan sandies w/2 Andes mints (softened the mints in the microwave then spread them on the cookies... Mmmmm...)

Workouts
Last night on the way home from bible study I got the envie to start working out again. It could be because my iron seems to be back to normal. I miss our walks but it's just too hot now to do them :-(
So what to do? It occurred to me that there is an exercise category on OnDemand (through our digital cable) that I can access for free. So I spent a few minutes browsing. I found a 10-minute cardio workout with modifications for beginners that looks doable! It's a good workout and includes brief intervals of more intensity. If I can find one each of upper body, lower body, and ab workouts that are good, I'll have a nice starting routine!
Just need to find the time to fit it in...

But the steak was frozen, the chicken wasn't, and I was home by myself with the boys so I went for the quicker option while they weren't fussy. I wonder if I had my steak at lunch if I would've still had the craving tonight...

Iron Update
For the past couple weeks I haven't been getting cold at night! A couple nights I've actually woken up hot! Far cry from a few weeks ago when I was sleeping with extra blankets... I feel better physically - more energy, easier time getting up in the mornings, etc.
Once Gabriel starts sleeping through the night I'll feel even better. Not counting on that anytime soon though ;-)

I Caved...
I caved today... I hadn't had pizza in almost 6 months. I can't say that anymore:-P I took my mom grocery shopping this morning and by the time the boys and I got back it was past lunchtime. We ended up picking up Jesse and going to the Italian buffet I love. I ate a few bites of a pizza with meat, a slice of seafood pizza, and the rest of the pizza I ate was veggie. But a lot of it. And some dessert pizza. It was all sooo yummy! I'm hoping I don't regret it in the middle of the night...

I Need New Recipes!
Low carb ones (lunch) are easy to find and we pretty much the same thing every day anyway. But supper... That's tougher! I'm getting tired of the same meals and I'm starting to dread suppertime :-( I don't have time to sift through a bunch of online recipe sites trying to find new ideas. I'm hoping to be able to go to the bookstore soon and look for cookbooks. I have a couple titles that might work, and according to B & N's website, both are in stock at our store. Getting there is the hard part... Jesse said he'll try to get me a few hours one day next week to do that where he would watch the kids.

Chili Mac
This was a real lazy meal... Broke 1 pk (13 oz) of whole wheat thin spaghetti pasta into 1-inch pieces then cooked and drained it. Mixed in 2 cans of chili beans and heated. It would have benefitted from adding more ingredients but it served the purpose ;-)

Exhausting Day...
I got up, got us all ready, picked up my mom, back home to drop her off and finish getting ready, drove to the funeral (about 1/2 hour), another 10 miles of country roads to the cemetery, drove back to town, picked up supper, came home, ate, brought mom back home. It was an all-day thing... And I'm EXHAUSTED!

The boys fell asleep about 9 so they'll probably be up early :-( Mommy needs to sleep! Yeah right...

I wonder if I didn't eat enough last night. Or maybe not enough fat. I'm so hungry but I feel like fruit isn't going to do it. I want some hot food! Doesn't even have to be breakfast food.

Meals Today
Breakfast - banana
Lunch - rotisserie chicken (rest of breast + wings) in spring mix w/honey mustard dressing
Supper - Amy's burrito, battered mushrooms (frozen, baked in oven) w/ranch, piece of cake (yellow w/homemade chocolate icing)
Dunno what food will be like tomorrow... Jesse will be a pallbearer at his grandfather's funeral tomorrow afternoon. Should be eating lunch here but no clue about supper...

If I Needed Confirmation...
... that I need to be eating the way I have been, I got it today! I ate an early supper and it was a cheat meal. It was yummy! It's Mother's Day after all! I ate supper and then it was a few hours before I had dessert. About an hour after dessert, I had to run to the bathroom and had a bit of an upset stomach. It's been 6 hours since supper, almost 3 since dessert, and it feels like the food is just sitting in my stomach... I have a slight ache in my tummy as if it's protesting. I felt okay till after dessert. I wonder if it took that long for supper to register as yucky or if dessert didn't sit well or if the combination of the two is what did it.
Either way, my stomach is rebelling! I'm looking forward to my chicken and salad for lunch tomorrow :-)
Breakfast - 1/2 cup dutch chocolate almondine coffee w/demarara and 1/2 and 1/2, pear later, raisins later
Lunch - 1 waffle (1/3 batch) w/butter - Bisquick batter
Supper - (frozen) boneless whole chicken stuffed with crawfish and rice dressing (I ate breast meat + stuffing), homemade macaroni and cheese (Barilla Plus pasta, 2% cheddar)
Dessert - Boston Cream Pie
I had spring mix in the fridge to go with supper but didn't eat any.
So let's see... How did I violate my eating plan tonight? Let me count the ways...
1. Mixed carbs with proteins
2. Not one but FOUR proteins - chicken, crawfish, cheese, milk
3. No veggies
4. No salad today
5. Dessert combined carb and protein (milk in pudding) plus ate too much of it
I definitely feel the difference in my body... Like I said, I'm looking forward to my chicken and salad for lunch tomorrow!

Hurricane Prep
For some reason I woke up today thinking about hurricane prep. Mainly food. Most of what we eat now is fresh, so I keep less nonperishables. The kind of stuff we'll need in case we lose electricity for a few days.
Eight years ago we were hit with a hurricane and had no electricity for about 4 days. We had food we could have lived on, but not anything we really wanted. We didn't have a car at the time and ended up walking a mile each way to pick up hearty soups, canned pasta dinners, etc. That experience taught us a lot though. For the next few years we made sure we had a "hurricane stash" of food that was not touched until the end of hurricane season unless we lost power. Once we started keeping a good amount of nonperishables all the time, we stopped doing the hurricane stash.
But I'm thinking it would be a good idea to do it again this year. Maybe even come up with some simple meals that I could do that would not need cooking and would be within my meal plan.
Hurricane season starts June 1 but usually doesn't really get going till August. I can pick up the stash a little at a time, every grocery trip grabbing a few things.
So I guess my first task is to start a few lists - snacks, meals, drinks, baby supplies, nonfood, etc. Then I can start getting everything...

Observation
The more I eat like this, the more I taste chemicals, artificial flavors etc. For example, the lemon cookies I liked not long ago now taste like fake lemons!
It's good in a way... These foods don't taste as good to me anymore, so I don't eat them much. They're the unhealthiest so it's good I'm eating less of them! But it also means my tastes are getting more expensive :-P

Meals Today
We ate supper at a friend's house tonight. It was healthy but not in line with my eating plan...
Breakfast - 1/2 banana, 1/2 pear
Lunch - leg quarter, can of corn w/butter
Supper - taco soup w/cheddar, piece of homemade whole wheat bread w/butter

After bible study at Mom's Night Out - wheat bagel w/butter
The second piece of cake was definitely a mistake...

Today
I figured it out earlier... In the past 3 nights I've had a total of 16 hours sleep! Some people do fine with that amount but not me! By 530 tonight I realized I kept dozing off watching one of my favorite shows so I turned it off and tried to take a short nap. Ethan was watching tv, Gabriel was dozing in his swing, and Jesse was working. I slept a little at a time (mostly because Ethan kept waking me up) but then I got a longer stretch. Woke up at 7! Wasn't even barely functioning till almost 715. Stood up and I was so weak and lightheaded! Jesse took one look at me and the time and told me to order supper from somewhere :-( I felt a little better after I ate but hit another wall a while ago...

Blueberry Muffins
These aren't overly sweet but are delicious!
Blueberry Muffins (adapted from Taste of Home website)
1 tbsp. baking powder, divided
1 tsp. salt, divided
1 1/2 c. oat flour (approximately)
1 1/2 c. whole wheat flour (approximately)
1-1/2 cups sugar
1 cup buttermilk
1/2 cup canola oil
2 eggs, lightly beaten
2 cups wild blueberries (if frozen, thaw before measuring)
Preheat oven to 400 (375 if using nonstick pan).
Place 1 1/2 tsp. baking powder plus 1/1 tsp. salt in a 1 cup measuring cup. Add whole wheat flour to equal 1 level cup. Dump into a large bowl. Place 1 1/2 tsp. baking powder plus 1/1 tsp. salt in a 1 cup measuring cup. Add oat flour to equal 1 level cup. Add to bowl. Measure 1/2 cup whole wheat flour and 1/2 cup oat flour and add to bowl. Add sugar and mix well.
In another bowl, combine the buttermilk, oil and eggs. Stir into dry ingredients just until moistened. Fold in blueberries.
Fill greased or paper-lined muffin cups two-thirds full. Bake for 14-18 minutes or until golden brown and a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
For mini-muffins, bake 10-14 minutes.
The original recipe says the yield is 2 dozen but I got almost 4 dozen!

1 3/4 cups milk
1/2 cup canned pumpkin
2 tablespoons butter or margarine, melted
1 recipe pumpkin maple sauce, (recipe follows)
Combine flours, sugar, cornstarch, baking powder, cinnamon, salt, ginger and nutmeg in large bowl. Combine egg yolks, milk and pumpkin in medium bowl; mix well. Add to flour mixture. Stir in butter. Beat egg whites in small mixer bowl until soft peaks form. Gently fold into pumpkin mixture.
Preheat waffle iron according to manufacturer's directions. Depending on size of waffle iron, pour 1/2 cup to 1 1/2 cups batter onto hot iron. Bake for 4 to 5 minutes or until steaming stops. Repeat with remaining batter and nuts. Serve with Pumpkin Maple Sauce.
NOTE: This recipe makes 8 waffles of 7-inch diameter.

Supper - BIG leg quarter (cooked on the grill), mixed salad w/honey mustard dressing, sweet potato, butter, french bread w/butter and garlic (cooked on the grill) - Cheat meal
Snack - homemade whole grain blueberry muffins
Saturday
Breakfast - 1/2 cup coffee, banana later
Lunch - leftover leg quarter and mixed salad w/honey mustard dressing, Ghirardelli square
Supper - red beans and rice, leftover garlic bread (red beans were cooked w/sausage but I didn't eat any)
Let me try to remember what was in the mixed salad... Yvette, add whatever I'm forgetting in the comments LOL

RECALL

Right now I have a teething 4-month that needs Tylenol occasionally for pain, and a 2-year-old who's having some sinus issues and needs Motrin during the night sometimes for the sinus swelling and pressure. And wouldn't ya know... Everything I had was on the recall list :-( So I took a trip at 10pm to Walgreens down the street to grab the generic of both before they ran out from everyone replacing their name brand stuff! They didn't have dye free which I'm not happy about but at least it's something!
So in the past week, our convertible crib and all the boys' meds have been recalled...
I was gone from Friday afternoon till Saturday night with only a few hours of sleep. Gabriel's almost done eating and I'm pooped so I'll post my meals later...
